I am making this today, hopefully. Flank is an interesting choice, some people swear by skirt steak, but I know both are delicious. Also I've heard of an 8 hour minimum marinade time, but maybe that's for skirt steak which is a little tougher? Anyway, thanks for this and I'm sure it will be great!
loved your recipe. but since i could not get flank steak i used lamb filet marinated in coriander lime juice garlicpepper and lemon grass powder. used the same relish except substituted onion with shallots.
served the tacos with normal flour toritillias (soft tacos) as toppings used meat , relish , red paprika peppers, lettuce, and 9month old grated cheddar cheese. topped with red taco sauce (from different video i found on the web) and creme fraiche..
you got me there..it's easy to be critical when watching videos, but with the crew there and the pace of our shooting schedule, mistakes happen...when I previewed this videos I thought the same thing..."your jerk...you went and used plastic wrap! Can I claim that plastic wrap is "less wasteful" than zip bags? That's the ticket!
might want to marinate the high acids in glass rather than stainless. i did some roasted peppers in lemon & olive oil, in some cheaper stainless bowls and was rewarded with a bunch of nasty metal flavouring.

that's great..sometimes we need to make substitutions..most people get stumped ans would not make the dish..kudos for you ..I like the improv!

he says he wont use a ziplock bag to help the environment while he marinates yet he uses plastic wrap equal in plastic to a ziplock lol to funny...

We left some ice cream overnight un-covered in the freezer..YUK tasted terrible!
