    another great way of dealing with the soft dough is to pour it on flouerd cloth and then manipulating the cloth to change its shape

  • That looks so good! I have an Irish Wood Cookstove, I love it and it gets hot; my bread takes only a few minutes to bake and it comes out good and I can bake many breads in no time at all. People love it. I think a cured baking stone would take away the blackened bottom for you.

  • best way to check the floor temp is to put a little bit of flour on the floor if it goes brown in 20 seconds it is just fine if it goes black and burns its too hot.

  • My wife just dumps a cup or two of water in the oven and closes the oven.... a lot more efficient, you can use a metal pan if you are afraid of cracking your tile.

  • Don't be too hard on yourself about the crumb structure. Ciabatta crumb is the one thing, as a professional baker, that gives me hives. It's always hit or miss. I'm convinced it's magic!

  • I have the same feeling about baguette crumb structure. Ciabatta I find a breeze in comparison.

  • You can buy a pump garden sprayer to spray water into the oven. That's what I use. I got tired of burning my eyebrows off with the hand pump. Now I just add water to the garden pump, pump it (pressurize it) and away I go. The garden pump has a long nozzle with handle, so it's much safer too!

  • Check the bottom of the bread after 20 -25 minutes. If it looks like it's starting to brown too quickly, transfer it to an insulated cookie sheet and put it back in the oven.

  • in my inside oven, I steam with ice cubes! i place my bread, then throw 1,2 or 3 cubes in the bottom of the oven. works like a champ

  • Ice cubes reduce the temperature of the oven (sometimes a lot) and take too long to go from ice to water to steam. By the time you get steam, it's almost too late. A better idea is to use hot water in a pressurized (hand-pumped) garden sprayer.

  • the bread looks pretty good, although holes in bread are not so good for toast lol, nice video though. looks problematic cooking bread in this type of oven compared to perhaps using cooking stone in normal ovens:D

  • This is the Hamelman recipe for Ciabatta with poolish (an overnight preferment). It's a great recipe and loaf of bread and pretty easy.
