You know they make Chuck out to be an idiot, but i really was popular in college for being the single most talented chef in my dorm. A lot of students really were hopeless idiots like Chuck.
..and this was Cornell for fucks sake. We were supposed to be the brightest in the state of New York, all of them rendered hopeless in the face of one man who watched this show obsessively.
The butcher said you can no longer get a bone in cut of meat. When I asked for a blade cut piece of chuck he pointed me to nice looking meat, but maybe the reason mine came out tough and chewy? I'm disapointed but will try a different recipie
I tried this and I must have done something wrong. Meat was chewy and tough. Sorry, but I didn't like it. Not sure what I did wrong ($9.98 mistake whatever it was)
@katkick703374 If the meat was well-sealed so it didn't lose it's juices, the only thing I can think is that it needed to cook longer, to allow the connective tissue to gelatinize. Low and slow. The bone is nice for gelatin, but not essential. You could try a dutch oven or crock pot.. Different, but still good.

Thanks, it really illuminates my understanding of the Chuck cut. I am a college bodybuilder who has a very low budget on including huge amount of beef in my diet. I usually choose the top blade part without much "fat strips".
Yep. and he's the same guy from the pickle episode. He has a digital camcorder sized camera there. Odd considering he has a trailer. Maybe he got fired for incompetence.
