@mukwah1111 You can freeze these macaroons, but they should be wrapped individually in plastic wrap, then placed in a container or freezer bag before freezing. When you go to defrost them, keep the plastic on them, too. That way the moisture from the ice crystals will stay in the cookie and keep them moist. Hope this helps! - Cindy
Thanks for sharing the recipe. I had a few questions. Can I use fresh coconut instead of dessicated coconut? Secondly, if I do not want to use eggs, what can I use as a substitute? Thanks very much for your time.
@milred16 You could use fresh coconut, but I think they would not be as sweet. As for the eggs, you could probably use a meringue powder or some type of egg white substitute. In either case, you do have to get a "fluffy egg-white" consistency, since that is a big structure of this cookie. I haven't tried either of these methods my self, so unfortunately I can't advise you on the actual proportions or results. Best of luck! -Cindy
Yes, you can leave out the cream of tartar. In some countries it has a very strong flavor, so I would definitely leave it out. It's meant to help stabilize the egg whites, so just be gentle when you're folding them in and it should work out fine!
I LOVE COCNUTS in every form<333
