  • Noreen, notice you have burns on your arms like mine from reaching into the oven!!! I get so totally focused when I cook that I sort of forget to protect myself. Dare to say I will not change since I am in my early 60's and I recall my mother also having varying degrees of those marks.

  • Thanks for sharing such a great idea! I love making breakfast for dinner, but I admit I've never thought of making something as simple as a baked omelette. I'm going to have to give it a try now.

  • @tootnbarb fritata is an egg mixture poured over cooked veggies and looks like a large flat egg fu young looking thing. Noreens is almost like a quiche w/out a crust or omelet casserole.

  • @bearlysceneranch I got that bender for $50.00 on ebay! It is a factory return, refurbished. If you look for them, you will find them. The white ones are easier to find. I had to have yellow, it matches my mixer and my food processor. I was lucky enough to be able to afford both of them last year. I am a total Kitchenaid snob. Rick gave me a stainless steel kitchenaid coffee grinder for Christmas and I totally love it!

  • @atticus9799 Anyone who cooks as often as you do deserves to have all the great equipment you have. I gave my wife a Kitchenaid mixer 20 yrs ago and she is still thanking me for it. Your egg dish with potatoes looks great!

  • Glad I had just eaten breakfast when I watched this, or it would have been painful. Yummmmm! Those rehydrated mushroom looked great. How did they taste?

  • @katzcradul The mushrooms are great! And if was making a sauce or gravy or something else with them I would have used the rehydrating liquid. It is nice and rich and smells good. Like mushrooms. I think they may be a bit more flavorful than the canned and a lot less salty.

  • Looks yummy, could you use something other then cottage cheese? I am not a big fan of that. Huge fan, love you recipes. I am on youtube everyday to see if you have put up another video, they are so creative. Awesome.

  • @fraser8402 When you mix this in the blender, you really don't know that it's cottage cheese. The only thing that I could think of the sub is maybe sour cream, but I think that may be to watery. You could also use silken tofu or just 1/2 cup of milk, then you would just bake till finished.

  • @atticus9799 What about ricotta chesse? Or is that too different. I will try the cottage chesse Im sure once everything is blended and baked together it will be wonderful. I think I will make it tomorrow for dinner.

  • @fraser8402 You know, I didn't even think of Ricotta! That would probably be my number one substitute for the cottage cheese! I'll bet that will be delicious! Thanks for the input. Just one more reason I love Youtube!

  • @edhunley OK, this one is easy to divide. Take 2 eggs, 2 tablespoons of cottage cheese blend, in a ramekin put some ham and cheese and veggies. Top with the egg mixture and bake in your toaster oven at 350 for around 15 minutes. Check it for doneness and top with more cheese put back in the turned off oven to melt the top and remove and enjoy! See? Easy Peasy. Hope you give that a try. And remember you are never really all alone in the world! Noreen

  • @edhunley My pleasure! I am always cooking for a crowd, my dad says that my mom and I don't know how to cook small! Always cooking big. But things like this are easy to make small. And, if you want to make just half, it was good leftover this morning, my kids heated it up in the microwave and really liked it. Thanks so much for watching and commenting! Noreen

  • @silverose1209 I just cut up some yukon gold potatoes I like to quarter the spuds then slice them. Heat a bit of oil in a heavy skillet.  Chop up an onion and add it to a pan, add the potatoes and turn everything so it gets coated with oil. Bring up to a good sizzle over medium heat then put a lid on it for about 10 minutes. Take the lid off and turn the potatoes every 3 minutes so that they don't burn. Cook until browned and crispy to your liking. Easy! Make sure you salt them at the end.
