Whenever possible you need to build the mesh in 'quads' (squares and rectangles), the main reason is for workflow purposes, you can't cut around an object if it's triangulated when you want to amend something.... Triangles are really a game engine 'optimisation', something 3D apps don't really require.
I like your tutorials, I mean 14 videos and a whole lot more, but for a new comer to the blender 3d art world, it seem you expect us to know when you hit a hot key. Id there a way you can specify what button you are hitting for your sub menus. It takes forever googleing what button you use.
Don't use Google, everything you need is on KatsBits; see the description and link to the shortcut keys, they are the most common key you use when modelling content, in fact I'd say that aside from the keys used to move around, "E" to extrude, "P" to detach, "Y" to split and "R" to loopcut are the main ones used when modelling.
Ah.. Keep in mind then that making content for *rendering* tends to have different idiosyncrasities to making content for *games*, although they obviously have things in common when it comes time to 'actualise' content (put it to use) techniques for the one may not cross over well to the other.
