@Alice5Wonderland I only eat small portions of anything with lots of calories. My diet is generally egg whites, tuna, broiled chicken, and lots of fruits & vegetables--very little rice, pasta, potatoes, bread, anything filled with fat, or desserts! The sauce should be just like a normal cheese sauce--It shouldn't be as thick as mashed potatoes. You can add some milk to thin it, if you need. Thanks for commenting!

Thanks for your lovely comment. Yes, you may freeze your leftovers. Just put it in a smaller container, and let it thaw out before heating it. I would probably heat it in an aluminum foil lined baking dish, just until it's heated through. It will be just as good the second time around!
We reheated it, and it was great. I put aluminum foil inside a smaller casserole dish, so I wouldn't have the empty part of the large casserole dish getting blackened. Then I closed the aluminum foil over the leftover fries casserole and let it bake at 350 for long enough for it to get hot through. I then opened up the aluminum foil to let the top crisp up a bit. I hope this helps!
