Whenever a bunny flops on its side like that it means they're happy and content. She was just playing and then flopped on her side. Happy bunny. I wouldn't irritate them though. That's mean to a little rabbit. They don't know you're just playing. Be nice. It looks like they feel comfortable with you guys otherwise they wouldn't cuddle and play and do the flopsy move. :)
That's what I've been trying to catch my rabbit Miles doing. He does weird crap like that all the time but every time I turn the camera on to video tape it he stops! I swear he does it on purpose!
