How come there's so much butter/cream/cheese when this is supposed to be a low-carb recipe? (Yes I know that there is no carbs in these ingredients, but surely all the fat isn't good for weight loss!)
@roseism Great question, roseism! Actually, a HEALTHY low-carb lifestyle is one that is high in dietary fat, moderate in protein, and low in carbohydrate. Removing carbs from your diet requires your body to use another macronutrient as its primary fuel source and that's where the fat comes into play. Your body CRAVES fat and needs it to function properly. We've been led to believe dietary fat will be harmful, but there's no evidence of this in the science.
When we make this we use and electric steamer. I highly recommend them for low carbers. Quick and easy, you can even make hard boiled eggs with the steamer.
Last time we made mashed cauliflower we put it in little ramekins and topped them with cheddar cheese and then browned the top under the broiler. Then topped them with some sour cream. MMMMMMMMMMMMMM good! Would be even better with bacon too.

You know, I don't think broccoli will necessarily work well in this recipe if you like the smoothness of mashed potatoes. There is a hybrid vegetable called broccoflower which I've highlighted in another YouTube video that may work, though. It's a cross between cauliflower and broccoli. :D ENJOY!
I would suggest you keep the water of the cooking because it contains minerals and Vitamin K. One cup of cowliflower provides you with 92% of you Vitamin C daily need! With the cooking and the throwing of the water, I don't know how much of these minerals and vitamins left, though. You could add this water to your soups.
I've used Cauliflower for potato salad and now thats the only way my husband will eat "potato salad" he loved it, I used frozen cauliflower, bacon, egg,chives,and mayo.....YUMMMMM it goes perfect with BBQ chicken on the grill :o) we dont miss the traditional POTATO at all!!!!!

Well, my sister and I started eating low carb in 2003 or so, and she was a major mashed potato fiend. After 8 months, she couldn't take it anymore and needed mashed potatoes. She searched for an alternative to potatoes and found a recipe for turnips. We got two huge turnips and boiled them, mashed them up and... gagged! She got so sick that she gave up on low-carb forever. And there was a funky turnip smell in the kitchen for some time.
Have you ever steamed the cauliflower instead of boiling it? I find that steaming it soft makes the cauliflower less wet and soupy. I use a steamer basket. You do not have to use the paper towels as the cauliflower isn't very wet at all. I use a food processor and add the flavoring stuff. I got this idea from Linda Sue.
Never steamed it before...mostly because I'm not sure how to do it. Don't have a steamer. Sounds like a great solution to the water issue, although I'm sure you could still dab the water out of it, too.
Put a collapsible steam basket in the pot, add about a half inch of water, put the cauliflower florets in the basket, cover and let it steam on medium low heat for 30-45 minutes. No paper towels needed. Also, I'm going to try your recipe since I usually make mashed cauli with cream cheese.

Alternative to heavy whipping cream, 1-2 oz cream cheese. It stays a bit more firm. Also, if you want to get crazy, just top it with Top The Tater...Holy Cow! You could also put in some Hidden Valley Ranch Ranch mix (the powder) and it tastes ridiculous.
Top the Tater for you non Midwest types is a sour cream with Chives in it. Dang!
One more thing... my husband thought my mashed cauliflower was mashed potatos the first few times he ate it! LOL. I make a different version than you and Kent, and it's nice to try out the different versions. I am gonna try the crumbled up bacon for sure!
It's funny that you posted this video today because I am making my version for supper tonight! I have been buying fresh cauliflower, but this week I also bought some frozen to try out. Guess it's not as great as fresh huh? Oh well. Guess I'll deep fry it. That's right, Have you ever tried deep fried cauliflower? It's good. No breading, just deep fry em. The only vegetable my husband will eat is lettuce, but he told me he thinks this tastes just like mashed potatoes. The bacon and garlic and cheese help. (I should say low carb veggie--he will eat corn, potatoes, and carrots until he is blue in the face.) But since we started LLVLC he has been doing alot better. Recipes like this really help.
It is always good to see new methods and new ways to cook the favorite low carb staples. I haven't had a problem with liquidy cauliflower but like the idea to put it back on the stove to melt and dry it out. Your method certainly prevents needing the food processor. I have been tempted to try ricing the cauliflower sometime too.

We always microwave steam the cauliflower, it takes a quarter o the time and leaves it not waterlogged.
Over time I've actually come to enjoy it with less dairy and more cauliflower flavor but I'm kinda wierd....
