  • Terrible waste of paper towels, shame on you, you could have steamed, or nuked them! The fat count must be off the chart! I still love my taters!

  • How come there's so much butter/cream/cheese when this is supposed to be a low-carb recipe? (Yes I know that there is no carbs in these ingredients, but surely all the fat isn't good for weight loss!)

  • @roseism Great question, roseism! Actually, a HEALTHY low-carb lifestyle is one that is high in dietary fat, moderate in protein, and low in carbohydrate. Removing carbs from your diet requires your body to use another macronutrient as its primary fuel source and that's where the fat comes into play. Your body CRAVES fat and needs it to function properly. We've been led to believe dietary fat will be harmful, but there's no evidence of this in the science.

  • LOVE this dish! Eat it at least twice a week!!! I like to see how other people make it, though. Never even thought of bacon!!

  • When we make this we use and electric steamer. I highly recommend them for low carbers. Quick and easy, you can even make hard boiled eggs with the steamer.

Last time we made mashed cauliflower we put it in little ramekins and topped them with cheddar cheese and then browned the top under the broiler. Then topped them with some sour cream. MMMMMMMMMMMMMM good! Would be even better with bacon too.

  • YUMMY!

  • I love this recipe since I lovee mashed potato ,but since I'm on a diet and can't eat it anymore now I can substitute potato with cauliflower!!

  • WOO HOO!

  • I love watching you guys! You make the best videos that make eating low carb so fun... I can't wait to make this cauliflower recipe..I could never think of anything to make this with, I loved mashed potatoes and this would be a wonderful replacement...Keep the great work up, and the videos coming!!!! :)

  • We appreciate you watching! :)

  • Mmm low carb fatty goodness to clog your arteries.

  • Oh, you're one of those people who thinks eating fat will clog your arteries and kill you, right? Well, I'd suggest you take a look at the most recent research that shows that theory is DEAD WRONG. Read GOOD CALORIES BAD CALORIES by Gary Taubes for all the details behind why consuming foods like what I demonstrated in this video are actually much more healthy for you than all that low-fat crap that's out there.

  • You two are so much fun to watch! Thanks for posting this video. I've been low carb (and loving it!) for several months now and both myself and my husband really enjoy watching all the tips you and Christine post.

    Keep 'em coming--and thanks again!

  • THANK YOU Georgia! We took a little bit of a break from making them for a few months, but we've been back adding new ones as of late...I even grew a beard for the camera. LOL! We appreciate you watching, laughing, and, most importantly, learning about the benefits of healthy low-carb living! Check out my LivinLaVidaLowCarb blog and podcasts, too! :D SEE YA!

  • Can you do this with broccoli as well?...or maybe even do a cauliflower broccoli mix?

  • You know, I don't think broccoli will necessarily work well in this recipe if you like the smoothness of mashed potatoes. There is a hybrid vegetable called broccoflower which I've highlighted in another YouTube video that may work, though. It's a cross between cauliflower and broccoli. :D ENJOY!

  • creamed carrots are really tasty too with fresh parsley.

  • Yep, about 4 servings is what I get out of it.

  • For a serving size of 1 cup, that's about 7g carbohydrates.

  • Don't microwave it too long or you'll dry it out. Just enough to melt the cheese and warm it up...about a minute or two. THANKS for watching!

  • Thanks I was thinking I needed a food processor...how long should i microwave it

  • I would suggest you keep the water of the cooking because it contains minerals and Vitamin K. One cup of cowliflower provides you with 92% of you Vitamin C daily need! With the cooking and the throwing of the water, I don't know how much of these minerals and vitamins left, though. You could add this water to your soups.

  • Cawliflower has been very good to me for my weight-loss. I don't think you can't eat too much. I never thought about smashing it, though. Thanks!

  • everyone should stop eating potatoes and start eating this! as you say Jimmy, "It's the bomb baby!!"

  • We always microwave steam the cauliflower, it takes a quarter o the time and leaves it not waterlogged.

Over time I've actually come to enjoy it with less dairy and more cauliflower flavor but I'm kinda wierd....

  • THANKS for sharing your ideas...and it's okay to be "kinda weird" everyone once in a while. :)

  • oooo I know what I'm making Friday night for dinner after I get groceries! :) Thanks for the recipe and tips!

  • I've used Cauliflower for potato salad and now thats the only way my husband will eat "potato salad" he loved it, I used frozen cauliflower, bacon, egg, chives, and mayo.....YUMMMMM it goes perfect with BBQ chicken on the grill :o) we dont miss the traditional POTATO at all!!!!!

  • hey how does that taste? Does it taste like taters?

  • YES!!!! I actually took the recipe to work and let the ladies taste it there and no one even new it was cauliflower...try it, its easy and tastes great!

  • It's much cheaper buying potatoes, though.

  • How well does it keep in the fridge?

I'm going to have to try this recipe out, it looks great! I have avoided fauxtatoes since the horrible turnip incident of '04.

  • "Horrible Turnip Incident Of 2004?" I gotta hear about this. But, yes, this saves for a week in the fridge.

  • Cool, I'll probably cook this up for dinner in a day.

Well, my sister and I started eating low carb in 2003 or so, and she was a major mashed potato fiend. After 8 months, she couldn't take it anymore and needed mashed potatoes. She searched for an alternative to potatoes and found a recipe for turnips. We got two huge turnips and boiled them, mashed them up and... gagged! She got so sick that she gave up on low-carb forever. And there was a funky turnip smell in the kitchen for some time.

  • I'm getting ready to hurl just thinking about it. LOL!

  • Have you ever steamed the cauliflower instead of boiling it? I find that steaming it soft makes the cauliflower less wet and soupy. I use a steamer basket. You do not have to use the paper towels as the cauliflower isn't very wet at all. I use a food processor and add the flavoring stuff. I got this idea from Linda Sue.

  • Never steamed it before...mostly because I'm not sure how to do it. Don't have a steamer. Sounds like a great solution to the water issue, although I'm sure you could still dab the water out of it, too.

  • Put a collapsible steam basket in the pot, add about a half inch of water, put the cauliflower florets in the basket, cover and let it steam on medium low heat for 30-45 minutes. No paper towels needed. Also, I'm going to try your recipe since I usually make mashed cauli with cream cheese.

  • GREAT suggestions! :)

  • I do the paper towel method, and have since the second time I made them. I usually boil the cauliflower with a clove of minced garlic per head of cauliflower. It adds real good flavor. I also use cream cheese instead of sour cream. My whole family loves these mashed "fauxtatoes" better than mashed potatoes...my kids beg me to make them all the time!

Oh, and yeah, I like lots of butter in them, too. MmmMMM!

  • The butter is what makes 'em AWESOMELY healthy!

  • i fried it too with garlic and onion and made fried"potatoes" and what about potato salad with it im gonna try that soon

great video and i love them...

  • THANKS for watching!

  • IM really glad u made this video guys/gals. Now Ive seen it done, and IM gonna do it :) IM down 25 lbs by the way.. This will be a great add to my loving low carb lifestyle! Keep up the great work, and great seeing yaw..

    John

  • THANKS John! It's really a GREAT staple recipe.

  • I see the mistake I made now. My faux taters were too watery but I did not do the paper towel method. I am going to try you method. Thanks for the vid.

  • I think you'll like the results. :)

  • Yummy! I had actually planned to make that with pork chops for dinner tomorrow ~ so kudos for the tip on drying it out!

  • It makes this dish taste like mashed potatoes! I just had some tonight and it is GREAT reheated, too!

  • Top the Tater or Hidden Valley, NOT BOTH...

    SORRY, THAT WAS IMPORTANT.

One more suggestion. Two Words...Food Processor-it's just so easy.

Hey Jimmy, did you get enough butter in there :).

    D

WARNING: you will actually crave these after making them 3 times. You've been warned...

  • Don't own a food processor and don't need it's PLENTY soft to mash. :)

  • I don't know why I'm watching this, seeing as how I just ate chicken and what? Mashed Cauliflower!

Alternative to heavy whipping cream, 1-2 oz cream cheese. It stays a bit more firm. Also, if you want to get crazy, just top it with Top The Tater...Holy Cow! You could also put in some Hidden Valley Ranch Ranch mix (the powder) and it tastes ridiculous.

Top the Tater for you non Midwest types is a sour cream with Chives in it. Dang!

    Crazy good yum yum yum

  • I may try the cream cheese sometime in this...and Ranch dressing, too! :)

  • Great recipe, yummy looking. I am not on a low carb, but i may try that. :-)

  • It's delicious and nutritious.

  • One more thing... my husband thought my mashed cauliflower was mashed potatos the first few times he ate it! LOL. I make a different version than you and Kent, and it's nice to try out the different versions. I am gonna try the crumbled up bacon for sure!

  • Most people are fooled by it!

  • It's funny that you posted this video today because I am making my version for supper tonight! I have been buying fresh cauliflower, but this week I also bought some frozen to try out. Guess it's not as great as fresh huh? Oh well. Guess I'll deep fry it. That's right, Have you ever tried deep fried cauliflower? It's good. No breading, just deep fry em. My husband grew up eating it cooked that way. :D

  • Never had it deep fried before. May have to try that sometime.

  • Made my morning finding a video from you both! Thanks for sharing your spin on making this. I will try it! :c)

Have a great Low Carb day~

  • Let me know how you like it.

  • Thanks Master Chef, for your spin on making Cauliflower mash. I don't dry mine out like u do or add bacon, but might try this sometime. I dry mine like bowulf suggested, place back on stove, heat on high with loads of stirring (Probably not a good idea with non stick pans). Good to see you back on youtube!

  • Shhhhhh, don't tell Christine you called me a "Master Chef." She'll say I'll let it go to my head. ;)

  • I make mine the same way except I boil mine in chicken broth and i put in 1-2 Tbsp. of cream cheese and if I am feeling really adventerous, some green onions, diced. Oh and jarred minced garlic instead of garlic powder.

  • I've heard about the chicken broth thing, but it tastes fine without it. I do like the cream cheese and other stuff you added, though. :)

  • I really hate cauliflower, but I just might try this!

  • The only vegetable my husband will eat is lettuce, but he told me he thinks this tastes just like mashed potatoes. The bacon and garlic and cheese help. (I should say low carb veggie--he will eat corn, potatoes, and carrots until he is blue in the face.) But since we started LLVLC he has been doing alot better. Recipes like this really help.

  • AWESOME!!!

  • I used to HATE with a passion cauliflower, too, but this makes you wanna eat it!

  • mmmmmmm looks good! Gonna try it soon :-)

  • It is always good to see new methods and new ways to cook the favorite low carb staples. I haven't had a problem with liquidy cauliflower but like the idea to put it back on the stove to melt and dry it out. Your method certainly prevents needing the food processor. I have been tempted to try ricing the cauliflower sometime too.

  • it is great in place of rice with some stir fried chicken and veggies

  • I so have to try that sometime!

  • That's something I've never done before, but would like to do too. There are so many variations on what you can do. THANKS for your input, Kent! I put a link in the notes to your Mashed Faux-tatoes recipe. :D

  • Rice cauliflower is nice, make sure u have a nice sauce with it, + finely grate it :o)

  • Will DEFINITELY try that sometime!
