  • We've been doing something similar over in Ireland - The guys at FOAM are welcome to come over and do a stein beer with us and share some recipes...

  • I have been brewing a few Stein beers for a while now. Just recently a 10% scottish Wee Heavy. I have also done side by side, non-stein and stein To compaire the differences. The Steins ends up with slightly more flavor, some earthy notes that are not hop derived. Also a slight smokeyness. Of course this was most likely from the wood used to heat the rocks. I now use propane as I can get them hotter faster.

  • How would brewers go about mashing in the days of stein brewing?

  • @EuripidesV I think it's the same principle - adding stones until the mash reaches the proper rest temp. Seems much more tricky than just hitting the boil and maintaining it.

  • I assume they added hops at some point? I imagine that beer is not "about" the hops though. did you taste a previous batch? Did you taste any special flavors from the stein brew process? Those guys look like they know what they are doing. I'm sure they've learned a couple things over the few years of doing it. Nice report. One day it would be fun to try something like this, even if it would take quite a bit of planning and rounding up some of that additional equipment.

  • @donosborn Yes, Don. On the brew you see there, Gene did first wort hopping as he was collecting from the mash tun. I tasted three of their stein beers. They were each very tasty. I would have to taste them side-by-side with un-stein beers to judge what effect the process had exactly, but they say they've done so themselves. In one especially there was a smoky character. Glad you like the story. It was a blast to shoot. Lots of cool visuals and sound to capture. And, the FOAM guys were fun.
