when making a fried rice; try not to add anything too wet or soggy, including super-soft rice as a result of too much water.
as a general rule of thumb, the order goes egg, rice, raw vegetables (if any), soy sauce or salt (preference), mix thoroughly, heat off, green onions, and any cooked meats can be stirred in afterward
@Rads2006 Amen to that. I actually go so far as to put it in the fridge overnight, so that it's perfectly separate and fluffy when cooked up in the fried rice.

make sure the cooked rice is stone cold before frying also
