  • Cooked as per receipt, god did it burn the pork, waste of a nice cut of pork belly if you ask me! Would cut down the cooking times to say 2 and a half hour on a lower temp. Shame as I was really looking forward to this!

  • I get to eat pork belly all the time and I love it. In Taiwan it's sometimes served over rice with dried and shredded fish. The pork belly, gravy, and fish are the perfect combo. Yum.

You are very intelligent, self aware, highly informed, and you do it all in a very nonchalant , unintimidating, humble way. AND, you still manage to have style. You are very impressive! All the best !!!! AWESOME recipe by the way, reminiscent of the Vietnamese style combining Fish sauce and sugar!

  • Yes, that was for cooking the pork belly tender.

    If you were to use raw pork pork belly and cook it with direct heat, you will lose a considerable amount of fat and it won't be as tender. This will still take some time.

    By slow cooking, not only do you have a tender meat, but the step with the pan can use higher heat - you are only concerned about browning the meat before adding the brown sugar sauce.

  • Just leave out the chilli. I leave stuff out of recipes all the time to suit the tastes of whoever's eating my cooking (or simply for convenience). I've used the recipe from this site/channel for Mac & cheese leaving out the mustard and the nutmeg cos a) my friend doesn't like mustard, and b) I didn't have any nutmeg on hand that day. When I did get some nutmeg for the next time, I didn't like it, so I won't be adding it anymore.

  • You should try. My first attempt at cooking was with some god awful cooking show on Food Network. The host sped through dishes and never explained anything thoroughly.  Scared me from cooking anything that wasn't already premade for a long while. Then I started watching Chef John's channel and eventually worked up enough nerve to attempt his ginger basil salmon dish. It came out delicious and I was surprised at the ease. This guy is a great teacher. He even covers the stupid questions.

  • Hi Chef John, why do you have to roast the pork belly? Rather, wouldn't it be simple and time saving to just slice the pork belly in smaller cubes and cook them in the pot with the sauce?

  • Because what he is using is a better quality than the average sliced bacon, but most importantly you cant slow roast the slices for 5 hours. You wont get the same flavor or texture from the sliced stuff.

  • It has been renamed by WHO from the deceiving name of "swine" flu to "H1N1" virus. Only a partial amount of influenza that started from pigs that gave it the original "swine" name. There are parts of human and avian flu within the H1N1 strain.

  • perhaps, but according to my sources, the pig starts off as being sick and then the human gives their flu to them pigs, then the chickens gives their flu to the pig.

    So in the end, the pig has all 3 flus, and thats where it starts spreading back to people.
