Most of the 4x4s have selectable cases; that means the driver can engage 4WD when necessary and use 2WD where it is advantageous - certain handling situations, etc. You will only see all four wheels spinning if lockers are used in both front and rear differentials. "Four wheel drive" is a bit of a misnomer. :)
you need besides the obvious preparation a powerful engine, the correct tire pressure and a bulletproof cooling system for the engine if you want to get through this desert
They canceled the finest parts for "being too tough" when teams reported their cars are getting stuck. That would never happen back in 1980's. The money behind big teams ruined what "Dakar" used to be.
