you could use soft maple, cherry, birch, beech and probably more. If you are only doing a double bobbin or bamboo turning than you could use the ring porous hardwoods. All of these are a compromise compared to hard maple but use what you have

What would be a good 2nd choice of wood for leg stock if one could not find sugar maple available?
