I think it would be better if the leafy vegetables were added in half way thru the cooking process ie about 15 mins later. This way the leafy veg will be crunchy and have a fresh green colour instead of the olive colour that overcooked vegs have.

This is a healthy rice dish. I am going to try it.. It will be missing fresh curry leaves and fenugreek leaves though. My spice store do not carry either of these fresh, only in dried or powdered form. It will still be a healthy dish regardless.
