Thanks Betty!! I used to buy that bear creek potato soup mix from costco and add ham and jazz it up with frozen corn and other things to make it my own. But costco stopped selling soo i'm been looking to make my own and yours looks easy and very tasty. (i've NEVER tried bacon and looks awesome!!) and a great change up to just getting a very thick slice of ham from grocery store deli sammich meat. Thanks Betty
i'm making this recipe tonight! i'm changing it up just a bit and adding canned sliced carrots and another can of corn nibblets and a can of chicken breast. the potatoes are simmering right now... i can't wait to taste it! :D
As you can see I did get by here to get the Corn Chowder recipe even though that Light Lemon Pie is still calling my name..LOL Maybe I'll just do them both and that way I won't have to make a decision. I'll have dinner and my dessert !

great recipe betty:) im just curious, here in UK most of our bacon is pure meat and only a little bit of rind so its really lean but it seems in USA you guys only have streaky with lost of grease or do you have lean bacon also?xx
We have various types of bacon, some leaner than others, but mostly it's like I used in this chowder. There is the option of turkey bacon and "imitation" bacon, but in a typical grocery store, there isn't much really lean bacon.
Although I've never tried it, they have soy bacon in the produce section of some supermarkets. Personally, I use the oscar meyer center cut bason that comes in a resealable plastic carton, and it works fine.
mmmmmm...looks awesome. I make a vegetarian potato corn chowder...gives a similar result, but a different flavor profile. I should try your recipe next time.

I made this with leftover Christmas ham instead of bacon. It was great and a good use for leftover ham.
