It's probably one of those Redbook things, where a CD game contains tracks if you listen to it on any CD player. I've done it on Pac-Man World (PlayStation) and Sonic 3D Blast (PC).

Actually, you can't listen to the SOTN Soundtrack directly from the game disc in a CD player. If you put it on a CD player, the only song you can get is this, wich is track 2. The soundtrack is in XA format, and you need a program to play it (psmplay 0.3 recommended). The file in the CD is XA_STR1, you can convert it to WAV, edit it in a sound editor, and then get into a desired format.
