I wanted to add after reading all ...listen people when you stop buying meat the vegetables are even less expensive for monthly grocery bill just you must go maybe more often so as its fresh.
I don't understand why in recipes people keeps saying how a certain vegetable is rich in vitamin C when they are going to cook the food.That is misleading for people that don't know that vitamin C dissappears when you cook your vegetables!It even dissappears (in contact with oxigen or sunlight) if you chop the vegetables and leave them to stand.I am not a raw vegan,but I think everyone should know that they will get almost none vitamin C from cooked vegetables.
That's simply not true, or there would be millions of people with scurvey. *Overcooking* food will greatly decrease its Vitamin C content, but it will still be sufficient for a healthy diet, especially for vegetarians and vegans, who eat more fruit/veg than the average person.
angusMCjamison - you're the one who is missing out on food, you're not eating all the countless amazing things that many vegans do because you just don't know about them, or wouldn't eat it because they're vegan! Lol. You'll never get to taste my lentil/pecan/date dip or vegan chocolate truffles or gooey raw vegan bananabread or raw cashew "cheese" or my siggy nutritional yeast "cheese" sauce or raw falafal with all sorts of sauces you couldn't even dream of because you're held back by dairy.
Loved this recipe! You can totally get vegan Italian breadcrumbs at the store if you check the labels carefully. Try putting a bit of balsamic vinaigrette over the top of the shrooms next time - it's dynamite!
My sister and her husband is vegan, but, really strict. They don't eat mushrooms, because it's a fungus, and they don't eat with processed flour, and other stuff. They're like, ridiculously healthy.
Maybe your hatred from peppers stems from the Green variety, which are a little harder on the system than the red and yellow variety...or maybe you just don't like peppers : ) Anyway, we've got a whole lot of eggplant recipes and more clips on the way, so do stay tuned.

To Sofia82rs, just seve a really delicious raw salat with the mushrooms and then you have vitamin C plus other great nutrients.
