I think you're missing the concept of a "training" partner. I think Sifu is trying to communicate the conceptual analysis and practical application of these skills in a safe environment for teaching purposes. Once learned these drills could be as enthusiastic as you want them to be with whoever you want.

I'm not sure how to dumb it down any more. Martial artists try to analyze concepts to see if they have a practical application in a real street environment. If so then we try to figure out a way to train the skill set safely until it becomes muscle memory and part of our essential arsenal.
