Liu Kang defeated Goro and Shang Tsung in the first MK and he defeated Shao Khan in the second and third MK. He also defeated Shinnok in MK4. But he couldn't stand Quan Chi and Shang Tsung together. So he missed Deception and Argamgeddon. But thank god, he came back in the new Mortal Kombat.

It's not completely unbelievable that they defeated him the way they did, after all you have to take into account that it wasn't a fair fight and both are powerful opponents on their own let alone as a team.

@Brutaka921 With Raiden and the other warriors, Shang Tsung and Quan Chi had grown in power quite a bit since killing Liu Kang, remember Shang Tsung himself had a nearly endless supply of souls thanks to the soulnado shown in the intro and Quan Chi possessed Shinnok's amulet which granted him greater power. In the intro Raiden might have stood a chance at winning, but like Liu Kang he was outnumbered and in the wrong place. When it looked like he beat Tsung, Tsung simply absorbs souls to heal.

In the deception Konquest Shujunko is the one who released Qaun Chi from the nether realm. So in theory he killed Liu Kang!

Actually, Quan Chi didn't use the nexus portals, but instead used the medallion on his belt, which he discovered somewhere in the netherrealm, in order to escape. The fact that Scorpion and Shujinko were not able to stop Quan Chi from escaping, however....
