Bugs, lobsters and shrimp are all filed under the same phylum according to things like their exoskeletons(for lobsters their shell) and the fact that they all molt and grow in a similar way....I have even heard insects have a very similar taste.

There is always a risk whenever eating undercooked food. By the way, freezing food doesn't ensure that everything is safe, it just slows the bacteria from spreading. Either way you aren't entirely safe. But in the long run, it is better to eat something fresh if you eat it raw. Because it is still fighting off bacteria and disease while its alive.

@th4Guy77 I concur. It's quite obvious from the way the chef cut into the lobster that he severed it at the joint between thorax and tail which, in all likelihood, quickly kills the lobster. Any remaining movements are last electrical discharges in nerves. And, quite frankly, watching your food dispatched in front of you, eating it right away and using every last bit of it is more respectful to the animal and bitching about it while you get your meat cuts from a supermarket.

There is always a risk whenever eating undercooked food. By the way, freezing food doesn't ensure that everything is safe, it just slows the bacteria from spreading. Either way you aren't entirely safe. But in the long run, it is better to eat something fresh if you eat it raw. Because it is still fighting off bacteria and disease while its alive.

It's nothing more than savagery. I have worked with some of the rarest foods known to man and have seen some ground breaking culinary feats BUT there is ABSOLUTELY NO DIFFERENCE IN TASTE OR TEXTURE between a still live and freshly killed lobster (P.S this is a crayfish since it doesn't have claws).

@th4Guy77 I concur. It's quite obvious from the way the chef cut into the lobster that he severed it at the joint between thorax and tail which, in all likelihood, quickly kills the lobster. Any remaining movements are last electrical discharges in nerves. And, quite frankly, watching your food dispatched in front of you, eating it right away and using every last bit of it is more respectful to the animal and bitching about it while you get your meat cuts from a supermarket.

about the band aid.....well, chefs ARE handling knives. I am pretty sure they clean up nicely in this kind of high end restaurant.

I don't see anything wrong with what they did with that lobster. They ate ALL of it. Pretty upstanding of Japanese culture to not waste any part of the animal when consuming it. In the West, we do it, too, they just sell it as JELLO, Glue, the shoes on your feet, etc. They see the whole creature as valuable and it's a rare treat. This is their culture.

believe it or not, this method of killing a lobster is infinitely more humane than submerging in boiling water or steaming. This kills the lobster instantly. Although its antennae are still moving in the video, the little critter is most definitely dead.
