So............ what are the standards in the USA when it comes to ground beef? Do you have to grind you own beef in order to serve it under well done, or can any ground beef be cooked under well done?
@Persadish i'm pretty sure most restaurants would order ground beef pre ground , usually usda grade a. i forget which cuts are allowed in ground beef, but GOOD restaurants would choose their own mix of cuts of meat and grind them themselves to get whatever fat/meat ratio they're looking for.

My two favorites are the Kaijo and the Mastodon, both featuring fried onions :-).
I LOVE Kuma's, however now the place is over run with yuppie scumbags. That are only there because it's the new hip thing. I remember when there was no wait for setting, now saturday it was a 4 hour wait.. I still go there, just not on weekends..

Too bad you have to be a millionaire to eat there. One of their themed burgers with a side and a drink and then maybe a beer will run to about $26 + tip.
According to the chef's myspace, she has a culinary degree. What a shame that one needs a degree in order to make burgers. She must be in a lot of debt. Cooking and food prep is obviously a skill that's learned on the job. Why do people need to accumulate an enormous amount of debt in order to obtain jobs that probably don't pay no more than $12/hour?
@Roguemember Im sure she makes more than $12 and hour. THe place is packed from open to close, 7 days a week. Also there is something to be said for doing something you are passionate about and working in an atmosphere that you enjoy. And she may not have debt from school, she could have gotten financial aid, or had the money up front. The degree got her a job at a cool place where she can express her creativity. She didn't necessarily NEED the degree to cook burgers.
I had no idea Kuma's had been on DDD! I've lived in Chicago for ten months and have eaten there at least 15 times. I'm never as happy as when I'm at Kuma's Corner.

Went here a few months ago and loved it. Just found out that it was featured on Triple D while searching for another joint they featured.
You cant beat a place with great music, great food and tattooed females.
