I've recently discovered Robert Eisenmann, who provides convincing arguments, based on his study of the Dead Sea Scrolls, that Christianity was invented by Paul.

Steve Wells produced a Skeptics Annotated Bible, Quran, and Mormon's Bible. Good for showing contradictions, and many other failures in the texts, but these aren't really Bibles in their own right.
