We have something similar to cobbler in the UK called crumble. You can pretty much use any fruit but I prefer bramley apples with brambles (occasionally). The topping is typically regular flour with some butter and rolled oats but you can just as easy crumble a cookie and then sprinkle brown sugar over the top (but demerara is also fantastic).
