and for the gameplay, Sora is learning that he can do more with the KeyBlade, so it improves the gameplay for KH3

wrong. read the instruction booklet. in KHone Riku was 15 and Sora and Kairi were both 14. in KH2 they are all a year older. Riku is now 16 and Sora and Kairi are 15.

Fenrir has the highest attack, comes with Negative combo so finishers occur sooner and has the best reach. Its good for physical attackers.

Ultima is the 2nd strongest, I believe has the highest magic attack, great reach and has MP Hastega which let's your MP fill up faster after depleting it. Its great for magical attakers.
