I'm gonna guess that if you just want rounds at not cut outs you can form the dough into a log then chill it then just slice 1/4" thick rounds off of the logs?
@Licazy Gingerbread has molasses in it, that's what really helps make it taste like gingerbread, however you could substitute the molasses with honey or corn syrup.
I put them in plastic freezer bags and keep them in the freezer until I'm ready to give them away. I then put them in plastic containers. Glad sells X-mas containers that are green and red and I use those.
They are fun to make with kids because they can cut them out and decorate them after they are baked. Make them nice an thick so that they are easier to decorate and are more sturdy. Just bake them a little longer.

I will try the parchment idea next time. The wax paper does have a tendency to rip when you roll on it.
