  • there are 2 kinds of semolina available in germany ... one is very fine and another is coarse.....

    which one should be used....

    Eno is available in India not here in germany what can be used inplace of eno....

    I must say Manjula aunty U are a wonderful cook....... and very very sweet...

  • Hi manjula!!! I must say, ur an amazing cook!! BUT i notice you incorporate yogurt in some of your dishes. IS the yougurt plain and unsweetened or is it slightly sweetened. please reply for I have been really doubtful of which yogurt to use in the chola tikki recipe which im eager to make for the family soon.

  • I made this and mine didn't come out fluffy. I wonder what i did wrong.The Yogurt i used was Greek style ( natural yogurt ) but very thick.

  • @proudbeingafg That orange powder is turmeric.Known as Haldi in most parts of India.It imparts yellow colour to the dish .

    Medium low heat and I use cake pan but any pan will work.

    i've just tried the receipe and it turnd out relly good ,fluffy and tasty:)

    in the mixture i've used 1/2 tsp of bicarbonate soda instead of eno and also in the garneshing i've also added sesame seeds,few curry leaves and a very tiny pinch of asfoetida and it tasted nice!:)

  • i think the eno is for airation... maybe bi-carb soda might do same trick. but only use little bit .. otherwise the taste gonna be bi carb

  • this recipe is great but i was wondering if the metal rack is necessary in the pot? right now i make it in the microwave but i'd like to make it on the stove so i was wondering if i need to have the metal rack in the middle. thank you!

  • well basically you need to steam it. If you don't put the rack the dhokla container will come in direct contact with the hot water.

  • I think I read somewhere that Manjula aunty is Jain, who do not use onions or garlic. But as standard Hindu (and more importantly a Gujarati, Gujarat being the home of the dhokla!) I know that garlic tastes great in dhoklas.

    my dad likes to have pieces/chunks of garlic in dhoklas and because they are steam cooked you won't get that over powering taste, it was quite surprising when I first had it. you basically just add it to the batter. BTW original dhoklas r made of besan which taste fab.

  • Sodium bi-carbonate is the main ingredient in ENO. That's what baking soda is too. So use baking soda instead of ENO.

  • Baking soda. The main ingredient in Eno is Sodium bi-carb, which is also baking soda.

  • just you need any vesel , flat is better becasue the thickness will be same. even glass type vessel which will not break in hot water will do

  • you use coarse semolina, or you can use besan (gram flour) with one tablespoon of semolina, which works v.nice

    Please let me know if you used moti suji or barik suji for this.

    Also is it alright to use baking soda+ lemon juice in place of ENO. As it is 60% soda bicarb and 40% citric Acid. Or if you could suggest another alternative for citric acid instead of lemon juice that would work better for this.

    what if you don't put it in, what happens?

  • It's a rising agent. It's like when you put baking powder in a cake. You can usually use bicarbonate of soda instead, but you might want to use less than 1 teaspoon. Maybe half a teaspoon will do. It won't be nice at all if you don't use some sort of rising agent.

  • I will say use the same amount of yogurt but yes you can make dhokla in microwave it should take about nine minutes.
