depending on the shape of the 1lb block you will get about 12 sticks out of it. So, 2 blocks will make around 24 cheese sticks (or more if you cut them small!)

what if you don't want to use hot scauce? what would work insted?

well, you don't need to use the hot sauce, but the heat (the capsaicin) cooks out of it so it doesn't taste hot. Also the amount of hot sauce that actually sticks to the cheese is very small.

But if you still won't try it, just use a couple of eggs, about a half cup of water or milk (milk is better) and season with salt and pepper. This is a chance to season the cheese stick, so go for it. Try a tablespoon of salt and another of pepper and see if it is enough S&P for you. Add more if needed!
