Next observation is that I have not had Larb yet in Thailand that had garlic in it. Yes they love garlic but they don't use it in Larb. Next I have yet to eat Larb with basil in it. I might be wrong on this point but I don't think so. Basil has a strong flavour to it and so would change the overall flavour of the dish completely. Sorry to piss on your candle but I can't help it. This video is full of missinformation.
Next observation is WHERE ARE THE KAFFIR LIME LEAVES? They are a critical ingredient, thinly sliced with the stalks removed (they are bitter). Also PEANUTS??? this isn't Som Tam where the hell did you learn that from? Next CHILLI SAUCE? are you complete heathens? How could you sully a good dish with some commercial concoction like that? No doubt it is the MSG in the sauce that you are craving. Stick to the roasted ground chilli, it is all you need for the grunty heat.
A few of observations. Firstly NO NO NO larb does not have lemon grass in it. I had a recipe with lemon grass in it (from an M&S book) I went to make it for my sister in law and her friend who are both Thai and they looked at me completely aghast and said "you can use lemon grass but if use then it not larb" it is called something else (can't remember what but they did tell me). Secondly fresh chilli??? only for a garnish. Larb should be made with roasted ground chilli for the spice content.
