@nachereylremidee Thank you for your interesting question. Most Nigerians in Nigeria use peanut oil for frying plantain because it is easily and more widely available. Any vegetable oil will work well for frying plantain. Let your preference determine what oil you use. I hope you keep enjoying the recipes and more to come. Chi Chi

@Africanwify abeg how can you fry with water. I am not trying to be rude if you dont know. Just put a little vegetable oil in the pan and fry it on medium to high for about 2 minutes on each side till golden brown.

canola oil is what's usually used, but as an alternative vegetable oil and/or butter works just fine as well
