(i dont know much about cameras thats y im asking so many questions) or should i save up abit more and get the canon 1000d? and in order to do various shots such a panoramic, macro, motion blur, time exposure.. do i need a diiferent lense for each? could i take HDR photos with it?
Make sure your dial is set to P (Program) setting, if you are on auto it will show less options. unfortunately the D50 never had a firmware update and probably never will, so that can't be the issue.

you don't have to have a camera that supports auto bracketing. Bracket manually. Just choose the aperture you want, get the correct exposure and then change your shutter speed. It won't be as accurate as bracketing, but it works just the same

Why use Program mode?
That will cause the Fstop/Shutter speed to be different each time because the light will change no matter what.
You're supposed to shoot in Manual -.-

Up to 6 just what? You only have 6 settings in the custom menu? Make sure you're not in Auto Mode or in any of the scene modes.
Program mode is the best for HDR.

Unfortunatley can not be done with the D40/D40x, as this SLR does not support bracketing :(
