  • They clean plates by dabbing a cloth on their tongue and then wiping the rim or wherever there is a smudge on the plate... you can see this in other high end cooking videos, yet it's terrifying to think that a chef might have used his finger to taste a sauce. I'm sorry but what is the actual risk? There is nothing bad to come of that, they are going to handle your food, they are breathing on your food at close quarters too, as would a waiter. It's not an issue. Wear a condom.

  • @fmbighair Hi there - I believe Marco is using "Sauterne" white wine - it's a French product.

    Sauterne is different than "Sauternes", a sweet dessert wine, also French...however, I believe the pronunciation for each word is similar (in French, with the occasional exception, you don't pronounce the "s" at the end of a word.) : )
