The introduction here is in neither Spanish nor Ladino, but completely normal Italian. (I'm not quite sure why Italian is being spoken in Bulgaria, but that's another question.) Most of the words of this Ladino song, known both as "Los Bilbilicos" and "La Rosa Enflorece", are here sung indeed in Ladino, though there's the odd word of modern Spanish thrown in, as arkhatych writes below (e.g. "mayo").
