I had to go back to that "surface" thing twice... So you got the part of the blade that comes down to the grind, then the grind, and then the part where you sharpen it, right?
@DemonHide Essentially the way I think of it is there are three surfaces to a cutting edge, all contribute to how a knife will cut. Primary surface, this case full flat grind....then you have the edge surface. Going further than that, you have a third surface which is doing the cutting. Uncommonly razor sharp with a microscopic flat cutting edge followed by a larger bevel for material to roll off of. WHEW...done.
