@futuristfood Thank you - hairy pasta would not be good! In most of my episodes I have my hair down but when the recipe calls for using your hands and actually kneading something... hair up all the way!
@Chatmay I wanted to show the method the way it is done in italy but our grandmothers. You can use the Kitchen aid if you prefer but you get a better feel for the humidity of the flour if you use your hands.
