I also this recipe for squash. I love the the Asian people cook vegetables. Everybody else just wants to put a whole lot of sauce on it to give them a flavor or taste.
Nice work, we liked your video very much so we embedded it on ChefCommons . com w/ link back and reference to Youtube. (Let us know if you don't wish for it to be featured)
Dear Evelyn, I think you should NOT do this recipe with frozen okra. You can make a Bhindi masala which has a more tomato gravy in it and the tomato will cut the slime. I can send you the recipe before I put it on Youtube!!!!!
Dear Evelyn, I am sorry I forgot about your request. Here is the recipe for masala okra the way I make it. It is not the same as others because I make it a little dry.
You need- 2lb Okra (fresh or frozen) chopped into medium pieces 1tsp Cumin seeds 2 Medium Onions 3 medium Tomatoes 2 chopped fine and 1 into 4 big pieces 1-2 Bay leaves 3-4 Green chillies 1tsp Turmeric 10-15 Coriander stalks and leaves 1tsp Ginger paste 1tsp Garlic paste 1tsp Red chili powder 4Tbsp Oil 3tsp Garam Masala Salt
Chop onions coarsely. Heat oil in a wok and add cumin seeds. In 1 minute, add bay leaves and onion. Saute on medium heat till the onion becomes golden brown. Add chopped tomatoes, finely chopped coriander stalks, turmeric, red chili powder, ginger paste and garlic paste. Saute for about 7 minutes till you see oil (not water) when you push it to one side.
Meanwhile, chop okra (the frozen okra may already be chopped) and add it to the thick paste and mix gently. Cover and cook for about 10 minutes on low heat. Open lid, and add 1/2 the coriander leaves, salt and garam masala and cover again for another 5-7 minutes. In the last minute or two, add the big tomato pieces, cover and cook for 1-2 minutes. Serve hot with naan, mango pickle and yoghurt.
Nice receipe, thanx.

I thought u were suppose to cut the okra like circular coin shapes like I see in other videos?
promcomp 2 years ago
@promcomp Not in this one. That is one secret to making it dry. The water from inside evaporates faster if it is cut lengthwise.

Can you use frozen okra? What do I do with this frozen okra my husband bought. I am scared that it will get slimy. :(

Is any salt needed?
sycjoe 3 years ago
Oops! I forgot to mention it. Salt to taste of course! I usually add 1/4 tsp. with the onions.
