He was there long enough for the fish to show up, but it didn't swallow him--it only looked like it because the fish is fat and was in front of him. The hit Ganon took was from being hit by the tail, not being swallowed.

I think what happenned was that the fish ate Ganon as he was being hit with the elbow. The blow shoudl've set ganon pretty far but he was already in the fishes mouth.

Even though Ganon collided with the solid part of the fish, the fish wasn't programmed to stop his momentum. so he stayed at the roof of his mouth and slid along the fishes body just long enough to slip out of the part of fish's body that isn't programed to be solid, and proceed to be hit by the tail and sent upwards..
