I'm pretty sure it's because of the way the Elephant taxidermy is destroyed. If you really want to get into it, the "extinct" sign also implies that he dies.
That bit with the eyes still creeps me out even after 40 years. Ironic how Katnip in fact sees his "eyes" lying on the floor, crams them into his own eyes; his subsequent panic and screaming "I can't see!" just cross the line into horror. Yes, it's his own dumb mistake, but it bothers me even now. At the least I'd have the glass eyes pop out at the end of the cartoon.
I'm with you there, Panda. I remember being so terrified by that pop eye scene and being upset that poor, stupid Katnip couldn't see. I actually had nightmares about this. It bothers me now, too and I like your idea of at least having the fake eyes pop out before the final curtain.
That and considering that I hated Herman & Katnip to begin with.
The gag (by Jack "Popeye" Mercer) IS in "poor taste", but it's funny! Katnip was probably THE dumbest cat in animated cartoon history, and he'd BE stupid enough to think his eyes "fell out" [even when he SEES them!]. But many other endings were a lot grosser. Let's set up a stunned cat to be electrocuted. Then, to accomplish that, take his tongue and SET IT ON FIRE. Oh, well, when he gets flattened later into an amusement park target-toy, the fire and pain are over. So I guess that makes it okay.
Well said, ForwardMan3001. I thought this cartoon was scary and that eye thing gave me nightmares. I agree that it is in atrocious taste and is a mean spirited ridicule of people who can't see. I don't like that. Even in 1956, I'd like to think compassion and reason existed. Too bad those qualities were not reflected in cartoons of this ilk. Herman was a mean little bastard and Katnip was just stupid and oafish. Even when I was a little girl, I didn't like H&K.
I love this, but I agree you're right about it being atrocious taste despite my own love of these...but there are more grotesue eye gags in the 3 Stooges..:)

There's Tex AVery's "Slap Happy Lion"..and Chuck Jones with all of his 1940s dark humor stuff, The Three Bears,etc.still classic..
