@ricardo3333333444444 They use the church as a cover to deceive the citizens. So it isn't a surprise that the templars themselves wouldn't care of the bible. For example in brotherhood (which by now you prob have) roderigo borgia said that since he was now the Pope he is at the position to use the citizens and deceive them.

by saying Nothing is true, it means, dont believe everything u hear, as the doctor was saying and the guy who burnt all the books,

By Everything is permitted it means, dont think u know the truth just based off of what u've learned and that there is ALWAYS a plan B or that u could make an error, like in one part of the walkthrough the rafiq tells Altair that he should expect to fail, not meaning he hopes he fails, but that he knows what to do if it happens.
