@nasyitahali1 You can use Parmesan or Peccorino Cheese for best results. Strange that they don't have Parmesan, it's a fairly common ingredient these days. Might be worth a trip to another supermarket or maybe the local deli ;)

Thank you so much for this recipe! I need to do a video response, I just made it with a twist! I used spaghetti, one egg, shredded cheese and added a bit of ketchup, now you may say the ketchup ruined it but, it is delicious, I'm eating it now =) Thanks again! Peace!
@shortyChanx3 maybe you can try to temper the egg if you're not confident? :) that means you remove the noodles from the pot first then you heat the cream and take two spoonfulls from the pot and mix it in a separate bowl with the eggs and drop it back into the pot together with the rest of the ingredients. It'll prevent it from scrambling. if you're more confident you can try the onepotchef's style as he's been cooking for ages! :)) But mmmm yum! i will make this tomm!
I make carbonara quite often but just a tip for those worried about making scrambled eggs. Mix the cream (I just use milk) and the eggs together before adding it to the pasta. I also use whole eggs and less milk than called for in this recipe. Enjoy! Great post one pot chef. I find too many people don't know how to make this wonderfully easy dish! Goes fantastic with a Cesar salad on the side (One of the easiest salads too)
To me the original version is a bit too eggy and it needs to be watered down so that it is not too dry. I think the cream binds everything together and gives it a nice velvety texture. I don't care that it is not original - if it is better!

I'm italian, leave me to tell you that the real carbonara doesn't want the cream... just only: bacon, oil, eggs, pecorino romano (or yes.. parmigiano is an alternative), pepper and salt.. fried the bacon with the oil... mix eggs with pepper and pecorino... add pasta into bacon.. at the end, turn off the fire, and add the eggs mixture..........in my opinion, your dishes are too fat... too much butter, cream, sause.... but this is just only my opinion... @vidoodeum Peccorino cheese works well too. You could use cheddar, but it tends to be a bit oily when it melts. Have an experiment and see what works for you ;)

@cupcakelovable Sounds like your brother needs more protein in his diet. If he's vegetarian, get him to eat more mushrooms, they are loaded with protein and very filling :)
Oh, yum, Dave! I can't imagine why I haven't made this in years. I used to make it all the time, and I will do it sometime this week. Thanks for the reminder and the inspiration. (I also add in some chopped spring onion with the cream, eggs, bacon, etc. It adds a lovely fresh flavor and the onions softens as the sauce thickens.)

dave, can u please do a veggie taco (if its possible) because my brother is a vegeterian and on taco nite he eats rice and meat plus he needs to gain a few pounds he is 118 pounds and he turned 19! and if u see him he is like my pinky! (im 9 years old you can imagine that!) please! thx, ciao!

@cupcakelovable Sounds like your brother needs more protein in his diet. If he's vegetarian, get him to eat more mushrooms, they are loaded with protein and very filling :)

Oh, yum, Dave! I can't imagine why I haven't made this in years. I used to make it all the time, and I will do it sometime this week. Thanks for the reminder and the inspiration. (I also add in some chopped spring onion with the cream, eggs, bacon, etc. It adds a lovely fresh flavor and the onions softens as the sauce thickens.)
