  • He's more or less right. The flesh of the basking shark, unlike some other shark species, is full of uric acid waste as a kind of antifreeze. It's toxic to eat when fresh, even if it's cooked. So they bury it in the sand for three months until it has literally rotted, then slice it and dry it. This removes enough uric acid to make it edible, but it still reeks of ammonia and tastes like chewy, rotten shark meat.
