  • you may want practice taking less tuna. If every boat that goes out takes 40+ tuna do you expect to have tuna to catch in a few years? Keep in mind the commercial guys really beat up on them. 2 tuna per person fishing is plenty when the average 12-20 pounds and bigger. Nice job on the carking! Responsible fishing will leave fish to catch and enjoy for generations.

    The fishery on the west coast here is troll caught only. We take very few albacore and we do it in a very sustainable way. The Monterey Bay Aquarium rates this fishery as the "best choice." The take is a very small percentage of biomass and is certified as sustainable by the Marine Stewardship Council.

    I understand that they are two very different fish, and the anatomy (skeletal structure) are completely different. However, I'd like to point out how nothing goes to waste with these particular fish mongers.

    It's a great example of how all fish should be respected.

  • @oizsie The red channel is the blood line you trim this off. The red dot was where the tuna was gaffed. There were no worms, cysts, or eggs in any of this meat.

  • @oizsie For you information, pelagic fish such as tuna, or in this case, Albacore contain the least amount of parasites. Younger (smaller), tuna such as the one in the is video have even less. Those dark red areas shown in the video are definitely NOT parasites. As bndfishing pointed out, the dark red area is the "bloodline", and it's common among almost all fish in one way or another.

    Try a little research on fish anatomy before you start spouting off.

  • @krogshede #1 that is not a tunafish. it's a true albacore. #2 any true pro yields 42-43% on any tuna over 20lbs., if they know what they are doing! 70% is a stretch unless you have the luxury to clean one fish a day ; try 250+ in less than 4hrs. you can read the newspaper through the carcass. #3 finning a tunafish is ridiculous. if you know how to trace you avoid all problem spots. you don't have to cut ; the knife is more of an assit to loin the tuna fish. come by pcyc to see for yourself!

  • Right on fellas.. We just spent 4 hours peelin some YFT we chunked. This is how you loin a tuna. There are alot of peiple that have no idea about tuna fishing and what is waste and whatnot. Theres a guy that mentions in Japan it would be considered wasteful to toss the carcass.. hmm... you've seen whale wars, they kill anything.. hell even they dont want the whale guts :D

  • Excellent! As an ex commercial tuna fisherman who now catches tuna solely for pleasure, I can find nothing wrong with these methods.

    To the armchair experts, get to know the difference between the tuna species, spend some time with those who work with fish everyday and remember that there's little that beats practical experience.

    Out here in South Africa, we catch plenty longfin(albacore) and its bigger cousin the yellowfin tuna.

    After loining, I give whatever is left to those less fortunate

  • Tried your technique yesterday and was pleased with the results. I even had so called fillet "experts" saying wow that was nice. Skining it first was great as I've seen so many people butcher the meat trying to skin it after carving out the loin. Thanks for sharing

  • Absolutely loved it.. I have seen so much tuna filleted and brought home to do so much more..we have friends that use the belly meat for crabbing.. very good instruction, nicely done..

  • @wenjilu Blue Fin tuna the belly meat is what it's all about. Albacore Tuna are not the same sort of quality for Sushi. Still good looking fish and I'm sure they were freaking great fun to catch!! Nice work on the cleaning.. made me hungry!!

  • @hrindak there are different kinds of tuna. For example, there are Yellow fin, Blue fin, Bonita, Albacore, and many more.

  • Too many fish off California!? I thought the sardine fishery collapsed out of site and that many species of abalone were harvested beyond common sense?

    Also spearfishing should be more restricted due to its tendency to select the largest and most fecund fish. Try using a rod, catching the fish and letting it go! That's my way : )

  • @mnidg84 Spearfishing is for food only.. we don't abuse fish and release them back.. Try freediving to 60+ feet shooting a fish and getting it to the boat and then filleting and eating.. that's our way.

  • i would say it looks alright. i don't think too much is wasted in this method, maybe the guy was nervous being filmed? reason it was a little careless but the technique is good i think. maybe a little more meat from the skull but they skin it and cut the loins. 4.5 stars. congrats on the big catch

  • stop making up stupid words. Its called "preparation". I know your trying to make yourself feel special by giving it a name, but its unnecessary. Fish preparation. Besides, carking is already a word. It means "to burdan yourself with worry".

    Oh, and when your preparing your fish, try not to waste so much. You do realise that Tuna is becomming an endangered species, right?

  • Now dont get me wrong, im with you on this whole sloppy breaking down of the fish...i see quite a lot being wasted and very messy cuts....mostly due to using the wrong knives (seriously? a carving knife???), The use of the word "perfect" was WAAAAAAAY out of place as well....BUT when you say tuna...trust me this isnt the endangered kind. That would be Bluefin Tuna...not this trash fish they are cleaning. Bluefin is the most amazing sea creature you will ever put in your mouth, THIS crap is cans.

    fyi it's the same areas for tuna prep in japan but perhaps a bit more particular in sectioning. different areas are different grades of sushi or sashimi use.

  • @keneta666 chutoro is only good for negi toro with a lot of green onions cause it smells awful and is mostly fat rather than nicely marbled. The normal toro is only good raw, and these folks don't eat it raw obviously. if you were to cook toro it also tastes and looks terrible. clearly these people have no use for it.

  • Gte your facts right: The FDA sets the mercury limits not the EPA. The Methyl mercury limits are set to be 1ppm wich is ten time lower than the loest amount known to casue harm to the fetus in a pregnant woman- so thelimit for non pregnant people is much hiigher, this making tuna sowrdifsh and shark very safe to eat. The fat in Blue fin and other fish is good the for the heart and mind-propaganda onyl goes so far befor people do their own thinking.

  • albacore is not expensive you can go down to the docks in westport washington and buy it for about 1,75 a pound for whole fish and about 3.75 for loins.

    Im really happy to see how you mention to use for fingers to peel the loin after the first cut to often I see people screw it up by trying to do everything with the knife!

  • The tuna we get off the Oregon coast are 2-4 year old albacore. Unfortunalty we don't get many of the really big tuna but the albacore we get are in prime condition and the best eating.
