    And so I'm safe in my home in Valencia, paella have been doing for generations and never have we put these ingredients.

    Maybe what you're cooking is not as good but paella.

    spanish food is simple, tasty, diverse... and also very elaborate and complex other times, but we don't need to use chorizo to know we are eating good, quality beautiful spanish food :-)

    PS. I was told once by a master paella cook from Valencia that adding lemon to the paella... is cheating :-)

  • I'll admit that I was wondering why you're going through all that work to make your paella. I make it fairly often for our family gatherings, cooked on a weber kettle. Try using a weber next time with a larger pan. You won't have to remove any of your seafood, sausage or chicken, etc. The beauty of paella is that there are as many ways to make paella as there are people to eat it. Don't let the negative comments from some of these fools get to you either. It looked good from my laptop.

  • to each their own. i made it a different way last year for my paella on memorial day party. we used weber grills and had it outside. people seemed to like it, maybe they were being nice. for my first time to make it on my own i thought i did a pretty good job. any way it was fun and people love to see someone cook their food.

  • I don´t know why some spaniards get upset for the video. Why dont u enjoy watching foreingers trying to cook our recipes? If the dish is not paella (is true, is not paella), and u are the kings of the real traditional paella, make a constructive commentary, not destructive! Show them how to improve the recipe. I'm from Spain and i like cooking. I usually try with diferent ingredients and ways to make of paella. OH SORRY FOR NOT RESPECT THE TRADITIONAL RECIPE!!

  • Remember that the original paella made in Valencia is not too appealing to many Americans, especially the use of rabbit. Not a big seller here in the States.

  • who cares if its is paella or jambalaya...food is an opportunity to express your individualism...it is after all your interpretation of a set recipe. I am not a Spaniard but i am almost certain as is in my country there are many variations to one dish...

  • THIS IS NOT PAELLA, I'm sorry. I'm not saying that the food was not good, but this is not a paella. I'm from Spain, from Valencia to be more exact, and I know perfectly how it's made paella. In my family and many others, as in local restaurants. And the only thing similar in your recipe with the paella is the pan you use and rice, a little more.

    The paella, the original, is from Spain, not from Cuba, Mexico or Italy. Because the origin of the word PAELLA is the pan use to cooking in valencià

  • I think his take is more of a Jambalaya....more of a American southern dish. Has alot of similar ingredient to the Paella...but not the same.

    With all the shell fish, fish and saffron....definitely NOT a poor man's dish. I thought saffron was one of the most expensive spices in the world?...maybe I'm wrong.

    Nonetheless, paella VERY delicious when made right.

  • Please, search the real paella valencia in spanish. This isn't the original. The original is with rabbit and chicken, and a selected verdures of our territory. Never pees, peppers, chorizo(¿?), etc... Only have onion, fish, sepia (a octopus specie) and crustaces the Arroz a banda (Arroç a banda in valencian).

    Put water(2 cups of water for 1 cup of rice)and let it boil 30 min.

    5 maximun heat

    Spread the rice making circles or making a cross,it must be well spread regularly by the bottom of the sauce pan or paellera and let it boiling for 7min.¡¡don´t stir the rice¡¡¡

    6when the time has passed,put the heat to the minimun and let it boiling 5min.and sprinkle the saffron¡¡don,t stir the rice¡¡.

    7took it away and cover with a clothe 3min.

  • Anybody with half a brain knows recipes vary from town to town and house to house in Spain or in Miami.I have a Cuban friend who makes it a little different each time, that's the great part of it!

  • paella is a dish from spain not from cuba and if your cuban friend prepares the paella different maybe it is because that is not a apella just some cuban rice dish similar to paella.

  • Great job dude! Even if some valencia people would point out that it's not the original recipe, I guess the result was nice and tasty! Your way is similar to the one I cook in my country (Italy). Just a couple of suggestions: spanish people say that the narrower the layer of ingredients in the pan is, the better it is, so use a wider paella if you find one. And also avoid stirrng the food with a metal tool: the contact metal to metal slightly alterates the taste. Use a wooden spoon instead

  • paella is not the spanish national pride. In fact qe are sick hearing the tourists asking for paella when this dish is only traditional in one region and oue cuisine have thousands of dishes apart of paella.

  • arroz valenciana (our term in my country)all i think is, its a delicious rice dish.. i really dont know the original paella, but as what i know as long the rice is present and some of the ingredients is there to make it look paella, then it could be consider as paella/valencia.. ^__^ in short we hv different version of paella...this version is still look delicious..   • I'm from VALENCIA, the land of origin of paella. I have to say you're wrong, the authentic paella never has ingredients like sausage, and does'nt mix meat, peas and seafood. You use the correct pan, and that what you cook in the vídeo can result a nice dish; but you can't call it paella because THAT RECIPE IS NOT PAELLA.

  • Hi Hogdawg!! I'm really happy to see you cooking that! Anyway I have to tell you that it's not exactly a paella. The real recipe is actually quite different. For sure your recipe is very tasty and it looks wonderful. If you want to know the actual recipe of the paella as we cook it in Valencia, I will be very glad to tell you, just tell me. Tomorrow I will cook a paella for some friends. I hope someone will bring a camera!

  • Thanks for watching the video. You all are right it is not true Valencia paella, I had some in Alicante a few years back, fantastic. I adapted what I made from local ingredients.

  • Sent dir-te que el que ix en el vídeo no és paella. La verdadera i autèntica paella es fa amb pollastre, conill i verdures de l'horta (garrofó, fesol verd, tomaca i carxofa) i també caragols. La paella marinera i per descomptat la paella mixta són invents turístics que RES tenen a veure amb l'autèntica paella. Si vols provar una bona paella, hauràs de viatjar al cor valencià (Sueca, Silla...l'Albufera)
