I've been making pizza and the dough for about 15 years. First, never measure. It's all about feel.

After a couple of glasses of wine I can't beat dough in a staring contest... I just stair with my eyes closed.

@ad010513 You can just use a bowl and spoon. Just put your hand/arm in the place of the dough hook. It's a much better workout - but it will totally work!
