If you want to do freestyle without the balance board, all you have to do is steer with your arms. (That's what I mostly do whenever I play We Ski.) But I find the balance board harder...
Actually, the maid suit is just one of the new ski gears where you can dress your character (Female). For male characters, they get knight armors (opposite of the maid suit I just said earlier).
Being able to ski the whole mountain is gonna be awesome! When I get this game, I'm going to spend hours exploring it and appreciating the "scenery"...
