I meant the MAC-computers, you shouldn't get the MAC-knives. The Mac-knives are just slightly better than the Globals.
You should get a Hattori HD-8, a Kagayaki (from japanesechefsknife) or an Akifusa 24cm (From epicureanedge)
The first knives has a core of VG-10. The Akifusa is made out of powder-steel, SRS-15.
I have an Akifusa on the way to me right now. I'm hoping to be able to pick it up tomorrow. It's really hard, 64hrc, so it may be hard to sharpen though.
@511V325731N Compared to a vg10 shun, I choose global...I have used both knives in the pro kitchen environment. Global has never let me down EVER. Not an endorsement just letting you know as awesome as vg10 is, i think the marketplace is over it. Knives are moving on from that steel anyway. I also find bamboo has a slower surface than maple boards. . I was never sold on the plastic is best deal. If im doing high grade fish for sashimi or beef tenderloin i go wood. BUT chicken i reach for plastic
It's a matter of opinion, of course. And i doubt that VG10 is about to be forgotten, if it's not replaced by another metal, not Cromova. Globals strength is their marketing, design (in an artistic point of view, ergonomically, they're a disaster. (For me, and most people i've spoken to.)

Quality-wise, Mac's (computers) aren't better than a right handled computer bought with research. The fit & finish of them are great though, and they're easy to use.
Mac-knives are of decent quality, nothing special, same goes for the F&F. I don't really know why they're that popular. I guess it's a movement of hipsters that don't want the design-feeling of global that started it. More ergonomical too.
I brought GS-5 (vegetable) and yes it does live up to the expectation. If had it when I was learning to cut vegetables in my Basic Cooking class; Enough said I.
These global knives are EPIC there like mini sumari swords. I brought these for my mum an she almost cut her fingers off which means they do what they suppose to do, cut through EVERYTHING.better than most german ones that cost $1000.

Tip, don't use plastic cuttingboards. They dull the edge extremely fast.
Use bamboo, it's antibacterial and has a great surface. Or just wood, it doesn't host the antibacterial feature, but it's much better than plastic.
And also, Global knives aren't that good. They're the MAC's of Knives, much of the cost comes due to design and marketing.
It uses Cromova-steel which isn't anything fancy for the price. Get a VG-10.
Or better yet, an Akifusa in SRS-15 PM-steel.

The global-knives vary from 20-30 degrees edge. There are alot of knives sharper than this. Alot. And not for alot more money.
Personally, i'd never touch a Global. I've grown up in a professional kitchen with alot of different knives, including alot of Globals.
The grip ain't for me. And the steel is average. But they are popular, that they are. Marketing.
