@ClearwaterBoater Ok, if you hit H while doing pretty much any task in this game, it'll hire a worker, who will drive to the edges of your field using whatever tool it has equipped, until it gets to all the field. Secondly, if you drive up to the mill, you'll see a square in the ground, and if you drive over it with your trailer, you'll see an unload button, hit that, and it drops whatever grain you have into the mill and they pay you.
