  • what he taking off is the scale, the skin is still attached to the fish.

  • Is the skin being shaved off with a knife done for any particular reason? Ie, why didnt he just rip it off in a few seconds rather than spend time actually shaving every little bit?

  • It's because he's trying to leave the fat on the skin. FYI Japanese Yellowtail are fattier than U.S. yellowtail.

  • aweet dude how did you prepare them i prefer higher fat content fish either grilled with spices so the flesh is sealed and while the fat cooks it stays in the fish or cover the fish in battered egs and flour it with flour and some hot spices then fried is the best. i just love cutting into the fish and having some liquid fat come out mmmmm!
