4 > Unless you seriously want coffee all over the place or burning hot coffee all over yourself. Simply listen for the espresso maker to make a boiling sound. When it starts to look like its boiling and a lot (not a little, a -lot-) of steam is coming out of the pouring spot at the top, simply turn it off, wait for the steam to stop coming out, and then pour and enjoy. Don't open the lid at this time, or you'll end up wearing it...

3 > When using a stovetop espresso machine, you want a particular grind of coffee, if your coffee is too fine it will come through the holes and you'll get nasty sediment in your finished product. If you're getting it from a specialty place that grinds their own coffee. TELL THEM you have a stovetop espresso maker, they'll know what grind to use (especially if they're Itallian)

1 > Your Italian espresso maker will have a -line- where you fill it to. Ignore this line at your peril, it'll still work, but the coffee you get out will be crap.

2 > Coffee should NEVER be stored in a fridge, this causes condensation which will spoil it. It should be kept in a opaque airtight container and used within about a week. Any longer and the taste degrades.
