I was born in Hong Kong. My mother buy fresh pork brains from the market. They are not can food. My mom think I am stupid, and she think eating pork brain may provide some vitamins for my brain ??? Why did she gives me pork brain when I was young? She steamed it, then she put some parseley or chives on the top, put some soy sauce or ginger dice on it. It does not have any smell but it taste okay, not bad. Just a bit chewy.
It's best to get them fresh, poach them, mash it up, add chives and green onion, little salt, and you get a very good brain salsa. Take sticky rice, or chips and dip. Delicious.

I wonder how they would be fresh out of the hog. Next pig I shoot I'm gonna try it! Have you ever tried various small game like raccoon, possum, squirrel, etc?

every since i watched dance with wolves with my dad we takled about eating the liver from a fresh buffalo..last summer iwas goingto put on a civil war cosutume i have and eat some squirrel but i coudnt find squirrel meat:)
